Spicy Chicken Veggie Stew

Ingredients
Chicken - 1 split breast, boneless skinlessMushrooms - 1/2 cup slicedOnions - 1/4 cupZucchini - 2 small cubedCarrots - 10 slices or 1/4 cup shreddedCauliflower - 2 florettes broken upSpinach - 1/2 cup freshSpicy Clam Cocktail - 1 cup (Mott's Extra Spicy Clamato is my fave)Pasta Sauce, Roasted Pepper - 1 jar (400 g)Whole Wheat Pasta - 200 g (1 cup cooked)Cottage Cheese, Low Fat - 3/4 cup
Directions
Saute chicken and seasoning in alive oil,
when just cooked, add Veggies & saute until tender, now cover the mix in sauce and clam juice, add one cup of partially cooked cooked whole wheat pasta; let stew over low heat stirring/checking often.

When ready top with cottage cheese.

This is a very hardy and filling dish; good for the cold days or when you want to binge for comfort; low in calories and fat, and high in nutrients. Use your own choice of veggies if you don't like mine.
