Fat Free No Bake Cheesecake

Ingredients
8 oz. fat free cream cheese, softened1 can (390 g) fat free sweetened condensed milk1/3 cup lemon juice1 tsp. vanilla extract (more to taste)*1/4 c. sugar (optional - not in cluded in nutritional value)1 graham cracker crust
Directions
Make sure your cream cheese is VERY soft. In large bowl, beat cream cheese until smooth & creamy . Add condensed milk, lemon juice & vanilla, thouroughly blending after each addition. Add sugar if desired (it really doesn't need it) and blend in thouroughly. Pour into crust & refrigerate several hours or overnight if possible. May still be a bit gooey even after 4 or 5 hours, but MMM good!

Great with fresh fruit (strawberries are my favorite) sliced on top!

    I have been fixing this recipe for years. This is one my mother used to fix at Thanksgiving only with the fat versions instead of the non-fat. My grandchildren all love this recipe. You can change it up by adding fresh fruit on top and other topping. - 11/19/09
