Crockpot Chicken & Dumplings

Ingredients
4 boneless skinless chicken breast2 cans fat free cream of chicken soup1 small onion chopped1 14 oz can fat free chicken brothSalt and pepper to taste1 can biscuits.
Directions
Place chicken breast in crockpot (you can use frozen breast )
Add cream of chicken soup, chicken broth, onion and salt and pepper.
Cook on high 5 to 6 hours or low 8 to 10 hours.
Shred or chop chicken breast return to crockpot.
About 90 min. before serving open biscuits and cut each biscuit into 4 to 6 pieces (depending on how big you want your dumplings) place on top of chicken mixture and push into liquid. Cover and continue to cook. If you have your crockpot set on low, you will need to turn it up to high when you add the biscuits. 90 minutes seems to be the time for cooking the biscuits in my crockpot, you may want check them every 30 minutes for doneness. Yes they will turn into dumplings!

    If making the recipe as written, there really isn't a lot flavor. I used organic boneless chicken thighs that I marinated in garlic and thyme overnight. I added chopped carrots and celery and thyme and garlic to the soup. I used about 1/4 cup chicken broth and I'm so glad that I didn't use more. - 8/7/12

    I put the chicken in frozen, so omitted the chicken broth. I also added mushrooms, carrots, potatoes, and celery salt and did the half cream of chicken/half cream of mushroom. I can't speak to the "dumplings", we only had time to bake the biscuits separately.... but the chicken mixture was AWESOME - 3/26/12
