Omelet Cups

Ingredients
Egg beaters (32 oz)Spinach (1 cup)Veggie Crumbles (0.5 cup)Reduced Fat Cheddar (0.5 cup)
Directions
Put all of the ingredients in a bowl and mix them. Divide them into a muffin tin. (we use one cup of the mix in each of the 6 muffin cups (make sure you use a large muffin tin so they dont over flow)) and bake at 375 for 30min.
