1 low carb, low fat tortilla1 tablespoon olive oil2 tsp minced garlic1/2 cup fresh baby spinach1/4 cup sun dried tomatoes (not in oil)1/4 cup fat free mozarella cheese2 tbsp crumbled garlic & herb feta cheese1 tbsp grated parmesan.
Lay tortilla on cookie sheet and drizzle olive oil on it. Add minced garlic and spread it around the tortilla evenly with the oil until all of tortilla is covered. Add mozzarella cheese, spinach, tomatoes, feta cheese and parmesan. Bake at 350 for about 10 minutes or until tortilla is crispy and cheese is melted and bubbly. Slice & Enjoy!
