Sadie's Chicken "Fried" Rice

8 oz precooked chopped or sliced chicken2 cups precooked brown rice, chilled3/4 cup gourmet mushroom blend1 small can water chestnuts, drained and sliced3/4 cup thin sliced carrots1/4 cup sliced green onion1/2 cup diced white onion1/2 TBS garlic minced1/2 cup liquid egg beaters3 TBS Teriyaki sauce
Precook chicken the night before and dice or use frozen bagged diced chicken, thawed.
Cook brown rice the night before and refrigerate or cook first and put in freezer while you cook the veggies.
Heat wok on high heat, add plenty of cooking spray.
Add in carrots first, stirring, cook 1 minute. Add in onion and cook 1 minute, then add in garlic.
Add in water chestnuts, mushrooms and stir constantly with the rest of the mixture for 1 - 2 minutes. Push up on the cooler side of the wok to make room to cook the egg.
Spray some more cooking spray, pour in the egg beater liquid and scramble. Mix with the vegetables after it is cooked.
Add a little more cooking spray and add in the chilled rice, cooking about 2 minutes. Add in chicken, green onions, teriyaki sauce, and stir all together, cover and reduce heat to medium for about 3 minutes.
Makes about 2 - 2.5 servings.
