parboiled long grain rice 1 cup uncookedolives 6oz drained well rinsed 2 tablespoons Sofrito( tomatoes, onion, garlic, pepper and cilantro)1 packet of sazon con cilantro y achiotespray of olive oil non stck cooking spray in pot 2 1/2 cups waterblack pepper to taste15 0z pigeon peas rinsed and drained
In large pot spray with olive oil lightly , turn heat onto medium add 2 1/2 cups of water , add the sofrito and sazon to that and mix well. Add olives and bring to boil. When at a boil add rice boil for one minute, then put aluminum foil and put lid on top of pot and reduce to a simmer. Simmer for 25 minutes. Turn off heat and let rest for 5 minutes . After that mix well and serve.
