Engine 2 Diet: E2 Almighty Healthy Wrap

Ingredients

1 onion, chopped 1 bell pepper, seeded and chopped4 ounces sliced mushrooms ½ can of corn, rinsed and drained (about 6 ounces)8 ounces roasted red bell pepper hummus (or 1 cup homemade)2 large whole grain wraps½ can black beans, rinsed and drained 1 roasted poblano pepper, cut into strips (see Roasting Peppers and Fresh Chilies, page 139)½ package fresh spinach (about 5 ounces)
Preheat oven to 450º. Sauté the onion until translucent. Add the bell pepper and cook for 2–3 minutes. Add the mushrooms and corn. Spread a layer of hummus on the wrap. Add the sautéed vegetables, beans, poblano strips, and fresh spinach. Roll into a burrito. Place on a baking sheet, seam side down, and bake for 8–10 minutes. Serve the wrap warm, and top with Guacamole and Salsa.
Variation:
Substitute one small can of drained green chilies for the fresh poblano pepper.

Easy and fast once you make it a few times. I make leftover filling and then bake it when I want it for dinner or lunch. This made about 5 servings for me, not 2. I added chicken to a few for my boyfriend and he liked them.
I use 1/2 onion and sometimes the whole package of frozen spinach (thawed). - 6/12/11

If you used frozen vegetables and fresh homemade beans you can eliminate a lot of the sodium...I'm sure the high sodium content comes from the canned ingredients....He cares about lowering cholesterol, but the sodium content on these recipes would probably raise their blood pressure!! - 3/20/09
