Ingredients
Ingredients:1 cup eggplant cubes2 cups sliced zucchinis2 cups yellow summer squash1/2 cup red pepper1 cup cubed fennel1/2 tsp red pepper flakes1/3 cup tomato paste1/2 tsp saltHeat 2 tbs of olive oil in cast iron skillet. Saute vegetable until soft and slightly brown. Add 1/2 tbsp of tomato paste, red pepper flakes, salt. Stir, cover and cook for 20 minutes, stirring often. Remove lid and continue to cook low heat until liquid has evaporated.
