homemade vegetable soup

Ingredients
In a large pot place 3 cups organic vegetable broth (homemade preferable), 4 cups of water, 1 tsp of salt, 1 cup of leeks (mostly white part + some of green) chopped, 1/2 cup of sliced carrots, 1/2 cup chopped fresh tomato, 1 cup of cubed cabbage, 1 cup celery chopped, 2 cups of sliced zucchinies, 1/2 cups of chopped red pepper, bring to a boil and then cover and simmer for 15 mns. Turn off light and keeping cover on let vegetable sweat for another 15 minutes. Puree, adjust seasoning to taste.
