Feta Yam Spinach Salad

Ingredients
3/4 cup of fresh spinach1/2 of a 5" sweet potato, sliced2 pieces of sun dried tomatoes, cut up2 ounces of feta cheese, crumbled
Directions
Peel and cook a sweet potato in the microwave for 6 minutes on high. Cut into bite size pieces or slices.

Place the spinach on a plate. Add the sweet potato, the sun dried tomatoes and feta cheese.

Sometimes I heat the spinach (it's nice wilted) and sweet potato in the microwave before adding the tomato and cheese. Eating it all cold is also nice.

Makes 1 serving.
