Healthier Lemony Potatoes

Ingredients
1/2 pound potatoes, peeled and cut into small wedges2 cloves garlic1 tbsp olive oil1 1/2 tbsp lemon juice1/2 tsp oregano1/4 tsp salt1/4 c water1/4 tsp tomato pastecouple dashes black pepper
Directions
Preheat oven to 375F/175C.

Combine garlic, oil, lemon juice, oregano, tomato paste, water, and salt in a casserole dish. Add potatoes and coat with the mixture. Bake covered for 25-30 minutes. Take out and stir, then bake covered for another 25 minutes. Take out and stir again, then bake uncovered for another 15-20 minutes.
