Blueberry Peach Crisp

Ingredients
Ingredients: 10 oz fresh or frozen blueberries 1 lb of fresh or frozen peach slices cup apple juice Topping 1/2 cup almonds 1/2 cup rolled oats 2 Tbsp apple juice 1/2 tsp cinnamon
Directions
Makes 4-6 servings.

Preheat over to 350. Place blueberries in the bottom of a square 8 inch baking pan. If you are using frozen, make sure they are completely thawed and drained of excess water. Place peach slices on top of blueberries. If they are frozen make sure they are also thawed and drained of excess water. Drizzle ¼ cup apple juice over fruit.

Place oats, almonds and cinnamon in the bowl of a food processor. After running for a minute and all are blended, add apple juice, and mix well.

Place mixture evenly over peaches and blueberries, and bake uncovered for about 45 minutes. Serve warm or cool.

Can add vanilla yogurt as a healthy addition to top it off.

    Made this last night and it was a big hit. The blueberries and peaches really go well together, and by adding no sugar, this remains a very healthy dessert. I suggest topping with Vanilla Frozen Yogurt, just to balace out the tartness of the crisp. Very good, I will be making it again. - 8/31/09

    Liked the idea of no extra sugar added. Did what one reader suggested and used unsweetened applesauce/applebutter a couple tablespoons for the apple juice. Added some nutmeg and cardamon too. - 1/16/16

    I made this for a 4th of July picnic and added 1 T Splenda Brown Sugar -- was well received and we liked it. Did add low fat vanilla ice cream after reheating it. Couldn't tell what the measurements are for the apple juice - could you clarify? - 7/4/11

    1 cup of apple juice with the fruit? Or a quarter cup as it says in the directions? I thought I'd try putting unsweetened applesauce in the recipe instead as I never buy juice. - 9/7/15
