Crustless Chile Quiche

Ingredients
1 cup egg substitue3 Tablespoon all-purpose flour2 Tablespoons smart balance margarine - melted1 Tablespoon Dijon mustard1/8 teaspoon hot sauce1 cup nonfat cottage cheese1 1/2 oz shredded reduced-fat Monerey Jack cheese4 oz can chopped green chiles2 oz chopped roasted red pepperVegtable cooking spray1 Tablespoon grated Parmesan cheese
Directions
Combine first five ingredients ina a bowl, stirring well with a wire whisk. Stir in cottage cheese, Monterey Jack cheese, green chiles and roasted red pepper. Pour mixture into a 9 inch pieplate coated with cooking spray, top with Parmesan cheese
Bake at 350 degrees for 45 minutes or til top is golden brown or until set. Yield 4 serviings. WW points equal 3

    I really like this quiche. I add more green chile and roasted red pepper, and often add a can of mushrooms or any leftover cooked veggies. 1/4 of the quiche is a good filling dinner with a side salad. - 8/3/14
