1lb. Lean Ground Beef1 cup diced onions.5 cup diced peppers2 cloves garlic diced12 Green Olives, Halved lengthways1 can Ro Tel Lime & Cilantro Diced Tomatoes2 tbsp Cumin2 tbsp Cinnamon1 tbsp ParsleySalt & Pepper to taste1/4 cup Red Wine1/4 cup water
1. Brown beef and drain of fat.
2. Add onions, garlic and peppers and cook till soft.
3. Add spices and stir well into mixture.
4. Add the olives.
5. Add the can of diced tomatoes and red wine and simmer. stirring occasionally.
6. Salt and Pepper to taste.
Serve over a bed of rice. White is traditional and seems to be better than brown rice with this dish. I've tried it with both.
