Brown Sugar Date Squares

1 pound pitted whole dates1/3 c. packed brown sugar1/3 c. Splenda2/3 c. orange juice3 t. vanillaCrust:1 1/2 c. flour1 1/2 c. oats1/2 c. packed brown sugar1/2 c. Splenda1 t. ground cinnamon1/2 t. baking sodaDash salt1/2 c. cold butter3/4 c. coarsely chopped walnutsVanilla ice cream, optional
In a small saucepan, combine the dates, brown sugar and orange juice. Bring to a boil. Reduce heat; simmer, uncovered, for 3-4 minutes or until thickened and dates are tender, stirring constantly. Remove from heat; stir in vanilla.
In a large bowl, combine the flour, oats, brown sugar, cinnamon, baking soda and salt. Cut in the butter until crumbly. Press half into a greased 13x9x2 baking dish. Carefully spread with date mixture.
Stir walnuts into remaining crumb mixture. Sprinkle over the filling; press down gently. Bake at 350 for 25 to 30 min. or until lightly browned. Cool on a wire rack. Cut into squares and serve with ice cream if desired. Yield: 2 dozen
