Garlic Chicken Sausage & Spinach Quiche

1 pkg (12 oz) Al Fresco Roasted Garlic Chicken Sausage5 large eggs, slightly beaten1 1/2 cups 1% milk1 cup shredded mozzarella cheese1 1/2 cups fresh baby spinach
Preheat oven to 375.
Spray large muffin pan with cooking spray.
Brown sausage, crumbling as it cooks. I removed the skin from mine so it could crumble.
Layer sausage on the bottom of each muffin tin.
Mix all other ingredients and spoon over sausage.
Bake for 50 minutes.
Makes 12 servings.

I had this for dinner tonight and used 2% milk, added garlic scapes finely chopped, pepper, basil flakes and sprinkled mushrooms on the top. It was a very filling dinner with green beans and roasted red peppers on the side. VERY EASY to make definitely would recommend to novice and experienced cooks - 7/2/09

Wonderful idea. I changed it up by using turkey sausage, fat free cheese, 1% milk. It is easy and very tasty. Satisfied every member of my family. - 2/14/09

Thanks very much for your comment. the first batch we made we used all fat free or low fat items, but by the time we got to these we had run out. thankfully i was making them for a party at work. For home I'm trying to use the lower cal ingredients. Glad you enjoyed!
