Lemon pickle (sweet)

Ingredients
12 lemons, cut into 16 quarters1/4 cup salt1/4 cup sugar1/4 cup honey1/2 cup cayenne pepper1 tsp cinnamon or a couple of cinnamon sticks1 tsp cloves, whole or ground1 tbsp cardamom, whole or ground
Directions
1. Place all ingredients in a sauce pan, stir, and simmer for 20 minutes.
2. Cool, bottle, and serve as needed.
3. Stays well for more than a month.

A teaspoon of pickles is more than what you would need on your dinner plate!
