Cauliflower Mac & Cheese

12 oz. elbow macaroni1 head cauliflower, roughly chopped (whole foods had organic orange cauliflower on sale so I used that & it looked really pretty with the cheese)1/4 c seasoned bread crumbs1 T olive oilkosher salt & black pepper1 T onion flakes1/4 tsp onion powder1 1/2 c grated cheddar cheese (use extra sharp- since you dont use much cheese you want as much flavor as possible)1 T grated Parmesan cheese1 1/2 c reduced fat sour cream (NOT fat free)1/2 milk (I used skim)1 1/2 tsp Dijon mustard
- heat oven to 400. Cook pasta according to directions. Add cauliflower during last 3 minutes of cooking time. Drain.
- on low heat, toss pasta/cauliflower with oil, salt, pepper, onion flakes & onion powder.Mix in cheese, sour cream, milk, and mustard.
-transfer to shallow baking dish, top with bread crumbs & bake until browned (12-15 mins)
*makes apprx. 6
