Cottage Cheese Pancakes

Ingredients
2 cups 1% milk fat cottage cheese4 eggs lightly beaten (just stir with a fork)1 tsp salt1/2 cup all-purpose flour
Directions
Stir together all ingredients. Let sit for at least one hour but overnight is fine. Cook on a non-stick griddle preheated & lightly sprayed with cooking spray. Turn after the edges begin to turn brown & surface is slightly dry looking; about 5 min at med temp. Serve hot with artificial sweetener OR sugar reduced fruit spread. Makes 8 4in. pancakes. Each serving is 2 pancakes.

    These are excellent if you add two teaspoons of olive oil and 3 pkts of splenda. Blend until smooth then bake on hot griddle. They resemble crepes and are so good. - 12/19/20

    These were good, but not great. Next time I'll try them without the salt (too salty), and I may puree the mixture first. I didn't think they tasted like pancakes, but they were good. - 3/25/09

    This recipe is okay. I think that the fact that there was cottage cheese in my pancakes urked me a little bit. Plus, when I was taking a bit of it I got the gooey strings that generally go with melted cheese. They were better when I added the fruit jam, but I could still taste the cheese. - 3/17/09

    I see the remarks fo rthe pancakes..they should have been names crepes and left out the salt. I ahve used fresh fruit or warmed fruit, syrup...I love these but I love crepes - 2/22/09
