Mediterranean Scramble

Ingredients
1 Whole Egg2 Egg Whites1 garlic clove chopped1 Zucchini chopped1 cup of grape tomatoes halved1 small yellow onion chopped1 tbsp of Extra Virgin Olive Oil1 tsp of Crushed Red PepperReduced Fat Feta Cheese
Directions
Mix the 2 Egg Whites and the one whole egg. Salt and Pepper to taste and whip. Set aside.

Heat the Extra Virgin Olive Oil in a pan over medium flame. add the onions, zucchini, red pepper flakes, and garlic. Cook until soft (about 4 minutes). Add the spinach and cook until wilted. Add the eggs and stir, scrambling the eggs into the veggies. Add the tomatoes and Feta Cheese. Serve Immediately.

I like to have this with Turkey Bacon.
