Instant Oatmeal muffins

Ingredients

1 package Instant Oatmeal (I used lower sugar maple & brown sugar)1 egg white2 Tablespoons of flour3/4 cup of water1 Tablespoon brown sugar or 1 packet of splenda
Heat oven to 350 degrees. Lightly spray a small muffin tin or a small 6 inch cake pan with non-stick spray.
Mix all ingredients in a bowl and pour into greased muffin tin or small cake pan.
Bake for 20-30 minutes or until a toothpick inserted in the middle of the muffins is clean when pulled out.
This makes 2 servings.
I have also used a microwave safe cereal bowl and sprayed it with non-stick spray, poured the batter into the bowl, and microwaved for a few minutes until it was cooked throughout.
