QCSAHP - Spicy Chicken Corn Chowder

3 Chicken breasts 1 can chicken broth1 can Corn, creamed1/2 Onion, yellow1 tablespoon Garlic, minced2 stalks Celery1 cans Rotel3 cans Soup, Cream of Mushroom8 oz Cheese, Velveeta1/2 teaspoon Pepper, black1 cup Cheese, Colby jack, shredded
To Prepare for Group:
1. Chop onion and celery.
2. Boil chicken with onion, pepper, garlic and celery. Shred chicken.
3. Bag chicken with onion and celery pieces. (Discard liquid).
4. Place cheese in separate bag.
5. Freeze flat.
Cooking Day:
1. Thaw chicken and cheese.
2. Mix cream of mushroom soup with chicken broth, and cook on medium heat.
3. Add chicken and all other ingredients. (Do not drain any cans)
4. Bring to boil, then reduce to simmer for 30 mins.
