Oatmeal Raisin Banana Cookies

1 Banana (mashed)1/8 Cup Vegetable Oil1 1/2 c. firmly packed brown sugar3 egg whites2 TBSP nonfat milk2 tsp vanilla1 1/2 c white flour3/4 c whole wheat flour1 c raisins3/4 tsp salt1/2 tsp cinnamon2 1/4 c rolled oats
Preheat oven to 350 degrees. Combine oil, mashed banana, and brown sugar in large bowl. Add egg whites, milk, and vanilla. Blend well. Combine flour, salt, baking soda, and cinnamon. Add to wet ingredients; mix well. Stir in oats and raisins.
Drop by slightly rounded spoonfuls onto baking sheet. Bake at 350 for 9 - 11 minutes or until bottoms are lightly browned (tops will not be browned). Cool on baking sheet 2 minutes before transferring to wire rack. Makes 3 dozen.
