Turkey Sausage and Spinach Quiche

Ingredients
4 Large eggs2 Egg whites1/4 c. nonfat milk3/4 c. frozen spinach, thawed and drained1/3 c. 2% (lowfat) cheddar cheese1/2 c. Ground Turkey Sausage (the patty kind, not link), cooked1 9" regular (not deep dish) pie crust1/2 tsp. dried parsleysalt and pepper (optional)
Directions
Preheat oven to 350 degrees Fahrenheit. Beat eggs and egg whites in a medium bowl until blended. Add all ingredients except the pie shell and stir until mixed. Pour egg mixture into pie shell (you may have a few tablespoons that won't fit), and bake for 15-20 minutes or until center is done. Allow to cool for about 5 minutes and then serve hot. Makes 6 servings.
