Fruit & Nut Bran Muffins

Ingredients

3 cups whole wheat flour 2 tbs baking powder1 tsp salt1/2 cup brown sugar2 tsp ground ginger1 tsp cinnamon1/2 tsp ground cloves1 cup raisins1 cup chopped walnuts or pecans1 cup chopped dates3 cups 100% bran cereal3 cups skim milk1/2 cup molasses or 1/4 cup honey2 large eggs3 tbs peanut oilnonstick vegetable spray
Stir together first 10 ingredients in large mixing bowl
Set aside. In another large bowl stir milk and eggs together, add oil and molasses or honey stir until well blended. Stir in bran cereal let stand for 5 min.
Meanwhile prepare muffin pans spraying with cooking oil or line with baking cups. Pour wet ingredients into bowl with dry ingredients and stir only until all combined and moistened.
Portion the batter evenly into cups.
Bake at 400 degrees for 18-20 min. or test done.
Makes 28-32 muffins.
You may use any dried fruit in place of the dates and raisins, I use blueberries and mixed berries, but omit the cinnamon, ginger and cloves add 1tsp vanilla extract. Make sure to adjust nutrition count accordingly. Enjoy
