Easy Veggie Egg Drop Soup!

1 packet Trader Joe's Chicken Broth1 cup Trader Joe's Stir Fry Vegetables1/3 cup Egg BeatersGarlic PowderParsley (dried or fresh)2 cups waterSalt and Pepper
Put water, chicken broth, vegetables, and spices in a small pot and bring to a boil.
When broth is very hot, pour in egg substitute a little at a time and wait for it to congeal a little bit. Stir after each addition. After all the egg has been added, let boil for a few more minutes. Egg may puff up a bit as it cooks - stir to break up into pieces.
Add salt and pepper to taste, and enjoy!
**A note, this soup doesn't quite look like regular egg drop soup might, but just let it cook a little longer and you will get the pieces of egg that you are looking for!
