Light Fettucini Alfredo

8 oz fettucini, dry2 tbsp. butter2 tbsp. flour4 oz Neufchatel cheese1 1/2 cups skim milk4 oz parmesan cheese, shredded or gratedground black pepperground nutmeg
Cook noodles in boiling salted water according to package directions.
Meanwhile, melt butter into a saucepan over medium low heat; add flour & wisk, cooking for 1 minute to make a roux.
Add cream cheese & milk, cooking for 5-10 minutes until thickened & noodles are cooked.
Add parmesan cheese, and stir until melted. Add black pepper & nutmeg to taste, and pour over drained pasta.
Serve immediately.
