Brian's White Chili w/ Black Beans

Ingredients
5 Chicken breast halves (bone & skin removed) diced2 15.5oz cans Goya Black Beans1 28oz can Hunts Tomato Sauce, no salt added1 28oz can Diced Tomatoes, no salt added1 Yellow Onion, sweet1 Jalepeno PepperCumin to tasteChili Powder to tasteGarlic Powder to tastePepper to taste
Directions
Fry up or boil the chicken as you like, then dice them. Chop up the onion and add to the diced chicken. Start adding spices. Add the rest of the ingredients, and use more spice to your taste. Let it simmer on low heat for 45minutes. Makes about 10 1-cup servings. Stores nicely in the fridge.

    Very good! Perfect for cold, wet nights! I did a bit of a variation and used extra lean ground beef. I used 1/2 t. cumin, 1/2 t. garlic powder, 3 t. chili powder. I also drained and rinsed the black beans. It was so, so good... and we have leftovers for tomorrow! - 2/23/10

    This was good. I added 2 T of ground cumin and 1 & 1/2 T of Chipotle Chili powder which made it a little spicier than we're used to. Also, used about 6 cloves of garlic, minced - sauteed the onion and garlic in olive oil. Drained and rinsed the beans. Makes a lot! - 9/2/09

    I grilled the chicken using a powdered Creole seasoning and increased the chicken content by about 1/3...taste, texture, appearance, everything was outstanding...the only thing I didn't like about this recipe was controlling the portion... - 3/16/09
