Vegetarian Chimichangas

Ingredients
Nonstick Vegetable Cooking Spray1 tbsp olive oil1/2 cup onion, chopped3 cloves garlic, minced4 frozen soy/vegetable burgers, thawed and crumbled1/4 cup water1.5 tbsp taco seasoning8 fat-free 7"-8" flour tortillas1/2 cup (2 oz) shredded cheddar cheese1/2 cup medium salsa1/2 cup fat free sour cream1 medium tomato, chopped1/2 cup cilantro, chopped
Directions
Wrap tortillas in foil and place in 300 degree oven to warm. Spray large skillet with nonstick cooking spray. Over medium heat, add olive oil, onions and garlic. Saute 2 to 3 minutes. Stir in crumbled veggie burgers or protein crumbles (tofu works, too) water and taco seasoning. Cook 4 to 5 minutes to heat thoroughly. Sppon mixture onto tortillas and top with cheddar cheese, salsa, sour cream, chopped tomato, and cilantro. Roll up and fold one end for eating.
