Spicy Stuffed Tomatoes

- 1/2 kb of lean ground turkey- 3 medium to large tomatoes- 1/2 cup of brown rice (uncooked)- 1/2 can of Rotel tomatoes (or other diced tomatoes w/ green chiles)- 3/4 cup of Mexican style cheese - 1 tbsp of chili powder- 1 tsp garlic- 1 tsp oregano- 1 tsp cumin- salt and pepper to taste
Cook the brown rice according to instructions. While rice is cooking thinly slice the tops off the tomatoes and hollow out.
Place ground turkey in a pan. Add garlic, chili powder, oregano, salt, pepper, and cumin. After turkey has browned add diced tomatoes. Once turkey had browned mix with 3/4 of the cheese and rice.
Spoon the mixture into the tomatoes and place in a casserole dish. Top off with a few sprinkles of cheese.
Bake for about 25 minutes.
*Use low-fat cheese for a meal in lower calories, I didn't have any at the time.
