One-skillet chicken italiano, quick and easy

Ingredients
1 tsp. olive oil1/2 c. onion, coarsely chopped1 c. sliced zucchini6 large mushrooms, slicedSalt and pepper to taste (if you like spicy Italian food, try adding red pepper flakes)6 oz. cooked chicken breast, cut into bite-sized pieces1/2 c. spaghetti sauce1/4 c. water
Directions
Saute onion, zucchini, and mushrooms in olive oil, adding salt and/or other spices as desired. When vegetables are tender, add chicken, spaghetti sauce, and water. Cook about 5 minutes more, until sauce has thickened. Serve over pasta or spaghetti squash.

    I didn't have mushrooms & my husband doesn't really like shrooms so I just doubled the zucchini & I LOVED it, but hubs thought it had too much zucchini-however he offered no alternatives, so next time I'll try 1/2 zuch-1/2 yellow squash? I LOVE vegetables so I'll be making this dish again! - 7/22/09
