Ground beef, extra lean, 1 LBMama Lupe's, 7-inch Low-Carb Tortilla, 4 serving Cream Of Mushroom, Campbells, 98% fat free, 1 CanGreen Chiles, Fire Roasted, mild, 4 oz CanOld El Paso Green Chile Enchilada Sauce, 6 OunceSargento Reduced Fat 4 Cheese Mexican, 1/2 cup
Brown ground beef with the chopped onion.
Reserve 4 ounces of Enchilada sauce.
In a large bowl combine the canned ingredients, saving back the reserved sauce.
In a casserole dish, line the bottom with two tortillas.
Layer tortilla, half of the meat, 1/2 of the mixed canned ingredients and one third of the cheese.
Layer the last two tortillas, the rest of the meat, canned mix, cheese and top with the reserved sauce.
Bake at 350 for approx. 15 minutes, until the cheese melts.
Serves 8.
