Tropical Morning Glory Muffins

Ingredients
Dry Ingredients2 c pastry flour3/4 c ground flaxseed or flaxseed meal3/4 c granulated sugar3/4 c brown sugar2 t ground cinnamon3/4 t salt1/4 t baking soda2-3/4 t baking powderWet Ingredients3/4 c flaxseed egg substitute (can find the recipe on Spark People)1/2 c crushed pineapple1/3 c orange juice, (I used fresh juiced)1/4 c extra light olive oil2 t vanilla extractOther ingredients2 c grated carrot1/2 c chopped pecans1/2 c flaked coconut, unsweet if you can find it1/2 c dried cranberries1 cup dried apricots, finely chopped.
Directions
Mix dry ingredients in a large bowl. Beat wet ingredients in a smaller bowl. Stir into dry ingredients just until moistened. Fold in other ingredients.
Pour into greased muffins pans, or paper muffin cups, 3/4 full. I used an icecream scoop, filled over full. Bake 350 for 15-18 minutes.
