Crustless Savoury Tart - Tuna & Onion - Energy 2 - Carla

250 ml (1 c) canned or cooked butter beans, drained and pureed200 ml (4/5 c) fat-free milk4 eggs10 ml (2 t) mustard powder5 ml (1 t) salt2 ml (1/2 t) freshly ground black pepper250 ml (1 c) onion, finely chopped2 x 170g can tuna in brine, drained120g low-fat Cheddar cheese, grated
Preheat the oven to 180C and spray 2 small tart pans (23 cm in diameter) with nonstick spray.
Puree the drained butter beans with 100 ml of the milk.
Pour into a bowl and add the rest of the milk, eggs, mustard powder, salt and pepper, and stir to mix.
Halve the egg and milk mixture and add half the tuna and half the onion to each mixture.
Sprinkle the grated cheese evenly over the 2 tarts.
Place both tarts carefully into the oven and bake for 35 minutes, or until set.
Leave to cool slightly and serve with a tossed salad and low-oil dressing, and 1 slice of low GI Health Bread, if desired. (Bread not included in calculations).
