Perfect Bean Salad

1 can Kidney Beans1 can Chickpeas1 can Black Beans1 cucumber1/2 red onion1/2 cup oil and vinegar mixture, to taste1 half lemon
Drain and rinse all of the beans and put them in a bowl. Dice the cucumber and red onion, and stir into the bean mixture. Squeeze half of a lemon into the bean salad. Mix oil and vinegar to taste.
Tips: I like white balsamic vinegar, and I usually add a lot of vinegar over olive oil because it's better for you and because I love the tangy taste. Plus, beans really absorb the flavor, so don't be shy to make it acidic! Paul Newman's own balsamic vinaigrette works really well as a substitute for your own oil and vinegar mixture.
