Chicken Piccata

Ingredients
1/2 cup fat-free, less sodium chicken broth3 Tbls fresh lemon juice1 tsp cornstarch1/2 tsp grated lemon zest1/2 tsp sugar1/4 tsp garlic powder4 skinned, boned chicken breasts, cut in half1/3 cup whole wheat flour1/2 tsp salt1/4 tsp pepper2 tsp. reduced-calorie margarine
Directions
Combine first 6 ingredients in a small bowl.

Cut chicken breasts in half. Mix flour, salt and pepper. Place in a large ziploc bag, add chicken, and shake.

Heat oil in non-stick skillet over medium heat. Add chicken and cook, turning occasionally, until done (20 minutes). Remove chicken from skillet and keep warm.

Stir broth mixture into skillet. Cook over medium heat, stirring constantly, until mixture thickens and bubbles. Stir in margarine and mix. Drizzle over the chicken and serve.

    I'm eating this RIGHT NOW! Soooo good. I used to make a similar Rachael Ray recipe with turkey cutlets. This is just as good and so much healthier. I served it on top of a HUGE bed of spinach. Next time, I'll double the sauce (worth the few extra calories) and add some capers :) - 8/30/11
