Shrimp Curry

Ingredients
1T butter1/2C apple chopped1/2C celery chopped1/2C onion chopped2 cl garlic minced2T curry powder (or to taste)About 1/4C flour3/4C chicken broth1 can coconut milk1lb shrimp
Directions
Makes about 4 servings
Melt butter, add apple, celery, onion and garlic. Cook til onion is tender. Add curry powder, cook til fragrant add flour (quantity depends on how thick you want your curry to be). Stir into onion mixture and cook for about 2 minutes. Slowly add broth then coconut milk, stir til it thickens. Add shrimp and cook til shrimp are done. Serve with rice and mango chutney.
