Ingredients
1 tsp canola oil1 tsp asian dark sesame oil4 cups coleslaw mix1 bunch scallions, sliced1/4 tsp red pepper flakes2 cups finely chopped cooked chicken2 tbsp chopped unsalted dry roasted peanutsjuice of 1/2 lime2 tsp low sodium soy sauce1/4 c chopped fresh basil10 iceberg lettuce leafs
Directions
1. Heat the canola oil and sesame oil in a large nonstick skillet over medium high heat. Add the coleslaw mix, scallions, and red pepper flakes' cook, stirring frequently, until the cabbage begins to wilt, about 5 minutes.
2. STir in the chicken, peanuts, lime juice, and soy sauce. Cook, stirring frequently, until heated through, about 5 minutes. Stir in the basil.
3. Top the lettuce with the chicken mixture and roll up.
