broccoli fritters

3/4 c whole wheat flour1 whole egg1/2 c unsweetened applesauce1/4 c skim milk3 cups broccoli florets steamed then coarsly chopped1/4 cup finely chopped onion2 cloves garlic chopped1/4 c grated parmesan cheese1 tsp habanero hot sauce (or to taste)
Mix chopped broccoli, onion, garlic and hot sauce together in medium bowl.
Add flour, egg, applesauce, milk and parmesan cheese. Mix together just until combined.
Spray cooking spray in non-stick skillet and heat to medium-high.
Drop batter by rounded tablespoonfuls into hot skillet and spread to about 1/3" thick with back of spoon.
Cook until edges start to dry, then turn and cook other side until done. (lightly browned)
I served this with light bleu cheese dressing, but non-fat sour cream would be equally as good.
