Sweet Corn Bread

Ingredients
3/4 cup cornmeal1 cup white, soft wheat flour1/2 cup granulated sugar1 tbsp baking powder1/2 tsp salt1 cup skim milk1 egg (beaten)2 tbsp canola oil2 tbsp margarine2 tbsp honey
Directions
Preheat oven to 400 Combine dry ingredients. Add milk, egg and oil. Stir until well mixed. Coat 9 inch pie pan with non-stick cooking spray. Bake until knife inserted in center comes out clean (approximately 25 minutes)
Combine margarine and honey. Spread over top of hot cornbread. Cut into eight slices.

    Yummy! A warning, stick to the recipe and don't use light margarine. It doesn't mix well with honey. The water in the light margarine began to separate and get runny. My fault. I also used half wheat and half white flour. Worked wonderfully! Thanks for sharing.SO GOOD!!! - 2/2/08
