Ingredients
10 whole, roasted New Mexico green chiles(can used canned)1/2 lb. part skim mozarella cheese-cut into 10 strips1 cup low-fat cheddar cheese-grated1 cup egg beaters(or equivalent 3 eggs) 1/4 cup whole wheat flour3/4 skim milk1/4 tsp. salt black pepper to tastehot pepper sauce (optional)
Directions
Preheat oven to 350
Peel roasted, whole New Mexico green chiles and remove seeds, spread on paper towel and pat dry. Put a strip of mozarella cheese in each chile and lay them side by side in a 9X13 baking dish. Sprinkle with cheddar cheese. Beat egg beaters and flour till smooth, add milk, salt, pepper and hot pepper sauce. Carefully pour over chiles. Bake uncovered for 45 minutes or until knife inserted in custard comes out clean.
Serves 4.
Stuffed chiles freeze well.
