Mama's Red Beans and Rice

2 tbsp. olive oil1 large onion, diced1 large green pepper, diced2 cloves of garlic, diced1 bunch green onions, diced1 lb. turkey smoked sausage, cut into coins3 cans kidney beans1 large can crushed tomatoes1 c. brown rice1 c. water1/2 tsp. red pepper1 tsp. hot sauce1 tbsp. oregano1 tsp. thyme1 tsp. salt1 tsp. black pepper
Heat oil in large soup pot over medium heat. Saute onions, green pepper, garlic and green onions until tender. Add sausage. Saute until browned. Add remaining ingredients. Bring to a boil. Reduce heat and simmer until rice is cooked, about 40 minutes.
Makes 8 1/2 c. servings. Best served with a big dollop of sour cream on top.
