Garlic ginger bok choy

Bok choi (I prefer baby bok choi)Fresh gingerGarlicTamariOlive oil
Mix the sauce first, to give it more time to blend its flavors together:
3 tbs of tamari
1 tbs of grated ginger (don't let the juice get away!)
2 tbs of grated garlic (don't let the juice get away!)
Wash the bok choy well.
Seperate the stems from the leaves. Slice the stems on a diagonal. I like to rip the leaves into smaller sizes, but larger leaves present better, I think.
Heat the 2 tbs olive oil in a large-bottomed pan. Throw in the stems to cook for a minute.
Add the leaves and the tamari sauce mix, toss the leaves in it, cover with a lid for one minute. Check every minute and toss.
When the leaves are bright green and getting wilted, you're finished! Enjoy!!
