Green Curry (chicken) with Rice

Ingredients
2 teaspoon green curry paste1 cup Coconut Milk1 Tablespoon dried coriander leaf10 oz skinless/boneless chicken breast1 cup of white long grain rice (preferably jasmine or basmati)1 Tablespoon olive oil for cooking
Directions
Dice chicken breast and place into a nonstick frying pan with olive oil and cook on high heat for 10 minutes. Mix coconut milk, green curry paste and coriander leaves together and add to the frying pan. Simmer on Medium.low heat for another 10 minutes. Meanwhile put rice in a saucepan covering it in cold water making sure water is about 1/2inch above rice. cover saucepan and bring rice to the boil. Allow to boil for 5 minutes and turn off heat. The rice will then cook itself if you leace the lid on!

Once the chicken has simmered serve on the rice. Serves 4 small plate full. Have with steamed veges.

    Made with lite coconut milk and added chunks of red and green peppers near the end of simmering so that they were still quite firm and finished with a sprinkling of fresh cilantro. Delicious! - 6/16/08
