Ingredients
2 potatoes1/2 cup baby carrots1/3 cup chopped onion1 tbsp Olive OilSeasoningsAluminum Foil
Directions
preheat oven to 425 F

Wash and chop potatoes (leave skin on!)

Combine ingredients, place on foil.

Form Packet by folding foil over veggies and rolling edges together.

Bake for 35 min.

    I live on a similar dish - add red pepper and red onion to the dish with a dash of balsamic vinagerette - and Mrs Dash. Banana peppers sometimes. Also try Aspargus with evoo, bv, Mrs. Dash - 5 -7 minutes. - 11/15/08

    Easy cleanup, one of my favorite things! :) Really good with fresh herbs tossed into the mix. I use Farmer Boy Restaurant salad dressing instead of olive oil to cut down the fat. - 3/13/07
