Spicy Chicken & Rice

Ingredients
2 chicken Breasts1 cup uncooked Rice1 small can of corn1.5 cup chicken brothjuice from cornjalapenos to taste1 cup chopped onion4 cloves of garlic2 tbsp chili powder1 small can sliced olives (1/2 cup)
Directions
Saute Chicken with Onion, garlic and jalapeno (to taste). When browned add 1 cup (uncooked rice). For the water I use 1.5 cup water with bullion cube and juice from canned corn. Comes to about 2 cups. Add chili powder and corn & olives. Bring to a boil, turn down, cover and simmer until rice is done. Simmer 20-30 minutes

If you have all of these ingredients from leftovers, toss in the same pot and warm for about 15 minutes. Still yummy! Sometimes I add cheese, sometimes I add salsa......
