Creamy Yummy Potatoes

Ingredients
*1 26 oz Bag Frozen Hashbrowns*1 Can Campbell's Healthy Request Cream of Chicken Soup*16 oz Light Sour Cream*1/4 - 1/2 C. Chopped Onion (some recipes call for green onions as well)Salt & Pepper2 C. Low-Fat Cheddar Cheese2 C. Corn Flakes
Directions
Preheat oven to 350 degrees. Mix soup and sour cream together in a bowl. In a casserole dish or 12" x 9" cake pan, mix hashbrowns, 1 1/2 C. cheese, onions/green onions, salt and pepper as desired, and sour cream/soup mix together. Spread the mixture evenly in the pan. Crush corn flakes--I like to place the corn flakes in a sandwich baggie and crush them with a rolling pin. Sprinkle crushed corn flakes on top of hashbrown mix. Sprinkle remaining 1/2 C. cheese over corn flakes. Cover with aluminum foil and bake at 350 for 45 minutes.

    This is an old standby for us. I like to add small pieces of cooked bacon to it. I tried it with ham, but found it to be too salty for our taste. Adding the meat makes it into a main course, instead of a side dish, so just serve it with salad or cooked vegetables and you have your yummy meal! - 10/10/08

    The hashbrowns used in the recipe are all natural so they don't have a lot of calories in them. But, for a larger serving there is likley more. I edited the recipe and made it 2 servings for the hashbrowns. Thanks for your comment!
