Good Morning Muffins

Ingredients
2 cups whole wheat pastry flour3/4 cup whole oats (old-fashioned)3/4 cup All-Bran cereal1 cup ground flaxseed meal1 cup brown sugar1 T. baking powder1 t. baking soda1/2 t. salt2 eggs, beaten1 cup buttermilk, lowfat1/4 cup coconut oil (melted)1/4 cup unsweetened applesauce2 bananas (ripe and mashed)1 cup walnuts, chopped (optional)
Directions
Combine buttermilk and All-Bran cereal and let set while you prepare other ingredients. Stir together all other dry ingredients. Add all other ingredients, including buttermilk with All Bran. Stir until mixed well but don't beat. Bake 18-20 minutes at 375 degrees in muffin pans sprayed with non-stick cooking spray (Pam or whatever).
After completely cooling, I store them in a zip-loc bag in the frig until ready to eat - pop them in the microwave for 10 seconds or so. Very yummy with a hot cup of tea!
