Coconut Flour Muffins

Ingredients
3 eggs2 T butter, melted2 T milk3 T honey or sugar1/4 t. salt1/4 t. vanilla1/4 c. coconut flour1/4 t. baking powder
Directions
Mix all ingredients except flour and baking powder. Add flour and baking power to other ingredients, mixing until lumps are gone. Bake at 400 degrees for 15 minutes.

Makes 6 muffins.

    My favorite muffins. I add berries, a sprinkle of cinnamon, or whatever is requested to individual muffins to suit each person's taste. YUM. Put these in the fridge if you don't finish them - they're a *great* cold snack. - 1/23/12
